He prepares the full gamut of Chinese specialties with flair, flavor and freshness, putting his personal touch on several dishes.

Little Chung King offers a full menu, with 26 seafood dishes, 13 beef, 11 pork, 13 rice and egg, and eight vegetarian, plus four duck, 18 chicken and five kinds of moo shu. The sizzling rice soup is outstanding. The large bowl for two comfortably serves four or five people. Filled with an abundance of vegetables, seafood and meat, it could be an ample meal in itself. The rice was properly fried, too, adding its character to this wonderfully prepared dish.

The menu offers 13 different appetizers, but ordering the Treasure Platter (for two or more) will assure a full sampling of most. Again, a small feast, excellently prepared, showing freshness in the fillings and not overpowered with dough, crust or wrappings. Outstanding crab won ton, which is worth ordering on its own, for its creamy texture and taste of real crab. Egg rolls are large, fully filled, and tasty, too. The remainder of the treasure platter appetizers include fried shrimp with lightly breaded, teriyaki chicken and a sizable smoked and seasoned rib.

Serving lunch or dinner is an art at Little Chung Kings. Each dish is brought your table separately to savor when hot, and eaten before the next one arrives. Little Chung King's plum sauce is served on the side, allowing addition to suit individual preference.
